Spinach, particularly fresh and sweet in winter,

is often referred to as 'spinach kimjang.'

Delicious winter spinach to enjoy all year round

can be blanched and stored in the freezer!

Pohang spinach, grown only in Pohang, Gyeongbuk,

is naturally small due to the sea breeze it receives,

but it is much sweeter, with better aroma and flavor than regular spinach.

While it is more expensive than regular spinach,

the taste is what matters!

But for those who only need a little bit when making this,

and a little bit when making that,

It's hard to avoid buying a whole bunch and seeing it wilt with only the cotyledons used

One bag of dried spinach contains

about 250g-300g of fresh spinach

You can blanch it in hot water

and make spinach namul,

but it will only be enough for one small side dish

Since it’s already dried spinach,

it won't expand as much when blanched compared to fresh spinach

Dried spinach is not really for that purpose,

but rather perfect for dishes that need a handful or a pinch of it

that I can confidently say are great ingredients

Dried spinach crumbles easily

Adding it to a dish after slightly soaking it

Doesn’t matter much if it crumbles,

but if you are sensitive to its appearance, please handle it carefully

**

Due to the characteristics of Pohang greens

Pohang greens themselves are shorter than regular spinach

They become much smaller when dried

So please note, they are not large-sized spinach

In dishes like doenjang jjigae or doenjang-guk,

you can add them directly without soaking

and let them boil right away.

For dishes that are low in moisture,

please soak them slightly before use.

Soaking spinach dried in warm water

for more than 10 minutes

will make them soft and swell up.

Take them out a little at a time,

and feel free to use them in various dishes.
