Kimchi is a living, fermented food.
As fermentation progresses, its color and flavor naturally change —

Q. How should I store it?
Store in the refrigerator at 0–2ºC (32–36ºF) immediately after receiving.

After opening, seal tightly and refrigerate.
For the best flavor, consume as soon as possible.
